Hello my dear readers! How are you doing? Are you ready for Easter this coming weekend? I’m having a bitter sweet moment going on as this will be the first Easter that I’ll spend so far away and without any family/ relatives except my own little family and we’re spending it in LA.
I’ve been thinking about the Easter recipes and what could I prepare for our Easter lunch and this chicken noodle soup came in mind, since it was my grandma’s signature soup which I’ve been perfecting for the past 7 years and I can now say that this is THE best chicken noodle soup ever and you won’t make a mistake if you decide to prepare it for your family’s Easter day gathering. π
Here’s what you’ll need:
2 chicken buttocks with skin and bones ( buy organic, grass fed and free range ones if you can )
3 bigger potatoes
3-4 carrots ( depending on the size )
3 tomatoes on the wine
2 bok choy ( cut off the round, hard edges )
fresh cilantro or parsley
1 chopped onion
1 garlic clove
1 tablespoon of tomato paste
salt, pepper, Italian seasoning

Preparation:
Put about 2 litres/ 9 cups of water into the sop pot over the medium high heat. Add the chicken right away and wait that the water starts to boil. When it starts to boil, add potatoes, tomatoes, carrots, onion, garlic and parsley into the pot and lower your heat a little bit. Let it simmer like that for about 40 minutes. Then add 1 tablespoon of tomato paste, your preferred spices and stir everything well. Add book choy and higher the heat to medium high. Boil like that for another 5 -6 minutes and take away the soup off the stove. Next thing that you need to do is “fetch” the chicken out of the pot and place it on the cutting board. The rest of the pot/ soup mash with a hand blender and then add small soup pasta or noodles of your preference and let the soup “sit” for 15-20 minutes. Now, next step is totally up to you, you can remove the skin and bones off the chicken and add the chicken meat into the soup pot or you can use that meat as topping to your salad or sandwich or you can even make a chicken and veggie quiche for instance. It’s completely up to you. π
