Gourmet moment: Baked octopus

I’m a fishy-fish kind of gal! Anything fish scores big time with me. 🙂 I love seafood in general and I can eat it raw, cooked, grilled, baked… It all sounds and tastes wonderful to me. One of my ultimate faves is baked octopus. I grew up eating this type of dish very often, esp. in the summertime. I got lucky to find a fresh octopus in my local grocery store so I decided to buy half of it and prepare a nice Sunday lunch for two. I believe that if you have a smaller appetite, this would be enough of lunch for three or even four persons.

To make the perfect baked octopus, you will need:

600 grams of fresh octopus

4-5 medium potatoes

2 carrots

2 parsnips

1 bigger onion

2 cloves of garlic

fresh rosemary and thyme

olive oil

overall spice

fine sea salt or himalayan salt

pepper

lemon zest

about 1 dcl red wine

PREPARE:

To get the super juicy octopus, I suggest you to freeze your octopus the day before you’re planning to make it. Defrost it the next morning so that it’s ready to be used for when you’re planning to cook your lunch.

Take an iron pot and put it on the warmed up stove. Throw in the octopus with a tiny bit of water and cover it up. The octopus will let it’s own juice into the pot. Turn the octopus inside of the pot two-three times so that it lets juice out equally and that it gets a nice purple color all around. This will take around 10ish minutes.

When that is done, peel and chop up your potatoes, cut up the carrots and parsnip and season them all with a mix of 2 tbsp of olive oil, 1 teaspoon of overall seasoning, 1 tbsp of water, salt+pepper. Mix it all well and transfer it onto a try in which you’ll bake all of your veggies and put the octopus on top of it all. Stack in a few rosemary stems and put it all into the preheated oven (150 °C).

You should cover your tray with the foil. Bake it all for about 25 minutes, then take the foil off, turn around your octopus, add half of the red wine, one chopped up onion, garlic cloves and cover it again. Bake for another 20 minutes, stir everything well, add the remaining red wine and put in some fresh thyme and lemon zest. Bake uncovered for another 15 minutes and your dish should be ready.

Minua onnisti, sillĂ€ satuin löytĂ€mÀÀn tuoreen mustekalan paikallisesta ruokakaupasta. Joten pÀÀtin ostaa puolikkaan. Ja valmistaa siitĂ€ ihana Sunnuntai lounas kahdella. Mutta uskon ettĂ€ mikĂ€li teillĂ€ ei ole mikÀÀn suden nĂ€lkĂ€, niin tĂ€stĂ€ annoksesta riittÀÀ kolmelle ellei jopa neljĂ€llekin henkilölle.

Valmistaaksesi tÀydellisen uunissa paistetun mustekalan, sinÀ tarvitset:

600g tuoretta mustekalaa

4-5 keskikokoista perunaa

2 porkkanaa

2 palsternakkaa

1 isohko sipuli

2 valkosipulin kynttÀ

Tuoretta rosmariinia ja timjamia

Oliivi öljyÀ

Yleismauste seosta

Hienoa merisuolaa tai himalayan suolaa

Mustapippuria

Sitruunan kuorta

Noin 1dl punaviiniÀ

VALMISTUS:

Jotta saisit mustekalasta mahdollisimman mehevÀn. MinÀ ehdotan ettÀ pakastat sen pÀivÀÀ ennen valmistuspÀivÀÀ. Ja otat sen ulos sulamaan pakkasesta seuraavana aamuna. Jotta se ehtii sulamaan ennen kun alat valmistaa siitÀ lounasta.

Ota rauta kattila ja laita se esilÀmmitetylle liedelle. Laita mustekala sisÀÀn ja lisÀÀ vÀhÀn vettÀ ja lopuksi peitÀ kattila. Mustekala pÀÀstÀÀ mehut sisÀltÀÀn kattilaan. KÀÀnnÀ mustekalaa kattilan sisÀllÀ 2-3 kertaa prosessin aikana, jotta se pÀÀstÀÀ mehut ulos tasaisesti. TÀllÀ tavalla mustekala saa tasaisesti hienon purppura vÀrin ympÀrilleen. TÀmÀ vie noin 10 min.

Kun tÀmÀ vaihe on valmis. Kuori ja paloittele perunat, porkkanat ja palsternakat. HöystÀ kaikki kÀyttÀen 2 ruokalusikallista oliivi öljyÀ. 1 ruokalusikallinen yleismauste seosta, 1 ruokalusikallinen vettÀ + suolaa ja pippuria. Sekoita kaikki hyvin ja siirrÀ uunivuoalle. Aseta mustekala pÀÀlle. LisÀÀ muutama rosmariinin oksa perunoiden ja porkkanoiden sekaan. Ja laita vuoka esilÀmmitettyyn uuniin (150C).

PeitÀ vuoka foliolla. Paista noin 25 min. Poista folio ja kÀÀnnÀ mustekala. LisÀÀ puolet punaviinistÀ, yksi viipaloitu sipuli, valkosipulin kynnet ja peitÀ vuoka jÀlleen. Anna paistua toiset 20 min. Sekoita kaikki hyvin. LisÀÀ loput punaviinistÀ. LisÀÀ tuoretta timjamia ja raastettua sitruunan kuorta. Paista vielÀ ilman foliota 15 min. TÀmÀn jÀlkeen annos on valmis.

    Oooh, How scrumptious! I love octopus and shall give this a go. Already I have a rectangular white dish. But will my end result look as wonderful as your photo?
    A Belgian friend eats raw herring for breakfast. I have tried it. Let’s just say it is an acquired taste.

    I like fish, but I think this might be too much for me. I didn’t grow up eating it, and have learned to enjoy it as an adult. I’m not sure adventurous though.
