Gourmet moment: Citrus chicken

As you might have already noticed, I love to cook at home and create new as well as re-create some of my all time favourite dishes. The recipe which I’ll share with you today is one of the ultimate favourites in my family and everybody loves it equally as much. I love to prepare it on Sunday, when I usually feel really lazy but I still want to cook something healthy, so this recipe then comes in as a perfect saviour since it doesn’t require much time spent by the stove and oven, but the outcome is always a super delicious one.

Resepti minkä jaan tänään teidän kanssanne on yksi perheeni suosikeista. Ja kaikki meidän perheessämme ovat siihen yhtä ihastuneita. Haluan yleensä valmistaa tämän ruoka annoksen Sunnuntaisin. Sillä se on yleensä se päivä jolloin tunnen itseni laiskaksi, mutta haluaisin silti valmistaa jotakin terveellistä ruokaa. Tämä annos on siihen tarkoitukseen täydellinen, sillä se ei vaadi paljon aikaa hellan ja uunin äärellä. Mutta lopputulos on silti todella herkullinen.

This is what you’ll need for 2 hungry people 😀 

2 chicken buttocks

1 head of romanesco cauliflower

handful of baby carrots or 2 bigger carrots

8-10 kumquats ( or half an orange )

honey, cilantro, olive oil, salt, pepper

overall spice / chicken spice

fresh oregano stems/ fresh rosemary stems

squeeze of half a lime

freekeh or grain of your choice

onion, minced garlic ( 2 cloves )

Tarvittavat raaka-aineet kahdelle nälkäiselle ihmiselle 🙂

2 Kanan koipea

1 kokonainen Romanesco kukkakaali

Kuorallinen miniporkkanoita tai 2 isompaa porkkanaa

8-10 Kumquatsia (tai puolikas appelsiini)

Hunajaa, korianteria, oliivi öljyä, suolaa, mustapippuria

Yleismauste / kanamauste

Tuore oreganon varsia / tuore rosmariinin varsia

Puolikkaan limen puristettu mehu

Freekeh tai omavalintainen vilja/riisi etc.

Sipuli, valkosipuli

*How to:

Preheat the oven to 18o °C ( 356 F ) . Take your baking tray, pour some olive oil on it.  Wash the chicken buttocks under the running cold water, pat dry with the paper towel and season with salt and pepper. Place the chicken in the baking tray, skin side up.

Make your “basting” mix of 2 tbsp of olive oil, 2 teaspoons of overall seasoning or chicken spice, chopped up cilantro and 1 tbsp of water. Mix it all well and spread evenly over the chicken. Squeeze half a lime juice and sprinkle about 4 teaspoons of honey over the chicken. Chop up your carrots, kumquats ( in half ) and romanesco cauliflower and add all of them in the baking tray, around the chicken.

Put everything in the oven and let it roast for 15-20 minutes. Take the tray out a little bit, toss everything well, add oregano or rosemary stems, chopped up onion and minced garlic in and put back in the oven for another 10 minutes. In the meanwhile boil your freekeh or whichever grain you’re using.

When the chicken and veggies are ready, take them out of the oven, let it sit for 5 minutes and then serve using the juice/ baste from the tray to splash over the plate. Enjoy!

*Kuinka valmistaa:

Esilämmitä uuni 180C asteeseen. Ota uunivuoka ja laita siihen oliiviöljyä. Pese kanankoivet juoksevan kylmän veden alla. Kuivaa “taputtelemalla” talouspaperilla, ja mausta suolalla ja mustapippurilla. Aseta kanankoivet uunivuoalle, nahkapuoli ylöspäin.

Tee mausteseos sekoittamalla 2 ruokalusikallista oliivi öljyä, yleismaustetta tai kanamaustetta, hienoksi hakattua korianteria ja yksi ruokalusikallinen vettä. Sekoita hyvin ja kaada tasaisesti kanankoipien päälle. Purista puolikas lime ja lisää 4 teelusikallista hunajaa kanankoipien päälle. Paloittele porkkanat, halkaise kumquatit puoliksi, paloittele romanesco kukkakaali. Lisää lopuksi kaikki kanankoipien ympärille uuni vuoalle.

Aseta vuoka uuniin ja anna paistua noin 15-20 minuuttia. Jonka jälkeen ota hetkeksi vuoka ulos. Sekoita lisukkeet hyvin. Lisää oreganon ja rosmariinin varret, sipuli ja valkosipuli joukkoon. Ja laita vuoka takaisin uuniin ja anna vielä paistua toiset 10 minuuttia. Sillä välin keitä freekah tai omavalintainen vilja/riisi etc. Ota vuoka lopuksi pois uunista, ja anna lepää 5 min. Tarjoile heti kaatamalla paistolientä vuoasta annoksen päälle. Ja nauti!
