Mussles in white wine

It’s time for a gourmet moment on my blog! I’d like to share one of my childhood favourite dishes has been mussels in a white wine, more known to Mediterranean people as “buzara sauce”. This dish is so simple to prepare, but very rich in flavour and even though, it doesn’t look like there is much to eat, it does fill you up very well!

I always say that it’s great to be filled up with delicious food like those mussles are, so without mumbling too much, I’ll go straight into the recipe. I hope that you’ll test this dish and discover for yourself how amazing seafood can be without having to go and dine out in order to get all of your tastebuds go “crazy”! 🙂

*WHAT YOU NEED:

200 cl of white wine

500 grams of mussles ( 1,76 oz )

2-3 garlic cloves

1 onion

handful or fresh parsley and 2-3 stems of fresh oregano

grated Parmigiano Reggiano cheese ( amount up to your own liking )

olive oil

overall seasoning, salt+pepper

splash of freshly squeezed lemon juice

bread crumbs / panko crust

bread of your choice for dipping the sauce 🙂

*HOW TO:

Warm up the olive oil in a deep, iron cast pot on the stove at medium high heat. Throw in sliced up onion, garlic cloves and fresh herbs. Simmer them for a little bit so they get “crystallised” and then put in the mussles. Stir everything well, add the wine and bread crumbs and let it all simmer for 5 minutes ( half cover your pot ). The juice from mussles will “come out” and then you’ll stir it all once again, add the overall seasoning ( your favourite one ) and the Parmigiano Reggiano cheese. Leave it all cooking for another couple of minutes, stir it and your dish is ready! YES, it takes so little time. When all ( most ) of the mussles have opened up, they’re ready to be eaten. 🙂

P.S. Dont forget to dip the bread in the sauce as it’s one of the most delicious parts of eating this dish!
