Hello my dear readers! How are you doing? Are you an avocado lover like I am? Or maybe a sandwich junkie, like I am? 😀 Then this post will be perfect for you! I was making this avocado sandwich about two days ago and I though that it would be good to “document” it and share it with you since it’s super delicious, healthy and easy to prepare at home. Of course, you can play with the ingredients and put in or leave out some of them, according to your liking.
What you need:
*2 slices of dark rye bread ( or any bread that you like )
*bell pepper, cucumber, baby spinach
*cheese spread, shredded or crumbled cheese ( any kind will do, I have used Pecorino )
*kale chips, oregano, salt, pepper, lime juice, cilantro
First, make your “avocado spread” by slicing open and pitting out one avocado, adding pinch of salt, pepper, oregano and bit of squeezed lime juice. Mash and mix everything well and your spread is ready.
On one slice of bread spread creamy cheese, then add baby spinach, broccoli sprouts, kale chips and sliced bell pepper. On another slice of bread put your crumbled/ shredded cheese and sliced cucumber and top it with some of your previously prepared avocado spread. Put both slices of bread together and enjoy your sandwich! 🙂
